Indulge in the deliciousness of our Vegan Lemon Pie Overnight Oats! It's a delightful combination of creamy oats and tangy lemon flavours, making it a breakfast masterpiece🍋


Lemon Pie Overnight Oats (vg)

Serves: 1 | Prep Time: 10 mins | Cook Time: 0 mins


INGREDIENTS

  • 2.5 oz. (70g) rolled oats

  • 1 tbsp. chia seeds

  • 5 fl oz. (150ml) almond milk

  • ⅛ tsp. vanilla extract

  • pinch of salt

Toppings:

  • 3 tbsp. soy yogurt

  • ½ oz. (15g) vegan white chocolate, melted

  • zest of 1 lemon

METHOD

  1. Mix all the ingredients in a cup or glass, set aside to rest for a few minutes, then cover with the soy yogurt. Chill in the refrigerator for 1 hour.

  2. Melt the white chocolate and place a thick layer over the yogurt. Chill the oats overnight, then next morning top with lemon zest and serve.

  3. Double or triple the ingredients for a perfect meal prep breakfast or post workout snack
