Spelt Gingerbread Men

Serves: 15 | Prep Time: 20 mins | Cooking Time: 30 mins | Chill Time: 2 hours


INGREDIENTS

  • 9 oz. (250g) butter

  • ½ cup (80g) coconut sugar

  • 1 tbsp. honey

  • pinch sea salt

  • 1 tsp. vanilla extract

  • 1 egg

  • 3½ cups (380g) wholemeal spelt flour

  • 1 tsp. baking powder

  • 1 tsp. ground cinnamon

  • 1 tsp. ground ginger

  • ½ cup (100g) good quality white chocolate for decoration


METHOD

  1. Place the butter, sugar, honey, salt and vanilla extract into a large mixing bowl, and using a hand mixer, whisk until smooth and creamy. Now add in the egg and whisk again until well combined.

  2. In a separate bowl, mix together the spelt flour, baking powder, cinnamon and ginger.

  3. Add dry ingredients into the creamed butter and mix for a few seconds until combined. Scrape the dough onto a piece of baking paper and flatten slightly.

  4. Wrap up the dough with another piece of baking paper and place into the refrigerator to rest and chill for at least 2 hours.

  5. Preheat the oven to 350°F (180°C). Line a baking sheet with baking paper.

  6. Remove the dough from the refrigerator and roll out between 2 sheets of baking paper until the dough is ¼ inch (½ cm) thick.

  7. Use a cookie cutter to cut the dough into gingerbread men shapes and place on the lined baking sheet.

  8. Place the baking sheet into the hot oven and bake for 20–30 minutes or until the cookies are just golden.

  9. Remove the tray from the oven and set the cookie on a wire rack to cool completely.

  10. Once the cookies have cooled, decorate with melted white chocolate.

  11. Store the cookies in an airtight container for up to 5 days.
